Lauren Vaught

After 28 years in a corporate human resources role, Lauren retired in 2011, and shifted her passion toward inspiring and educating others about the incredible health benefits of eating a whole food, plant-based diet. She began her business, Edible Musings to share information on nutrient-rich foods and delicious recipes to nourish the body and reverse illness and disease. Hungry for more knowledge, she completed the plant-based certification course in 2015 with the T. Colin Campbell Center for Nutrition Studies. She teaches cooking classes in her home, provides small group catering services, and is available for private consultation and cooking instruction. She is involved with the plant-based and vegan communities in Asheville, and participates in educational events with MAHEC and the CHIP program.

Lauren is originally from Chicago, now living in Asheville with husband, Roger, and a rescue cat named Sunday.
